Juris Kenins is an acclaimed bartender with over 10 years of experience. Previously, he was a senior bartender at American Bar, Savoy - London. He recently moved back to his home country Latvia and started to manage newly opened bar, Barents. He has competed in several bartenders competition and a few global finals.

60ml Mugi Shochu Amber Water*
1 dash orange flower water
10ml Abavas Berry Distillate

*Shochu Amber Water
120ml Mugi Shochu (Barley), Kanehachi, Oita
60ml Amber Water*
Leave to rest at least 48 hours.

To make Amber Water:
Add 10g of amber to 100ml of hot water. leave to rest at room temperature for 24 hours.

To make the cocktail:
Stir all ingredients in mixing glass and serve chilled in a coupe.

30ml Mugi Shochu (Barley), Kanehachi, Ooita
30ml hot water
30ml tomato water

Stir in serving glass for hot drinks. Garnish with dried porcini mushroom.
