Yamamoto Shuzo uses the best fresh Kagoshima-grown sweet potatoes in our pursuit of a sweet potato shochu that really carries that delicious sweet potato flavor. We also use the famous underground waters of the sacred Mount Kanmuri for both the sake-making and dilution processes.
Shochu production is a joint project between mother nature and human beings.
Brewers intuitively know the state of the potatoes and koji by experience, and they slowly nurture the shochu into being through direct engagement. We believe that our customers find our shochu delicious because we value our sense of temperature, direct intuition, and experience-building in the production process.
In our opinion, it is the very “heart” of shochu production that guarantees the shochu's quality.
