About Takuma Watanabe

In 2003, Takuma started as Barista and became a bartender at XEX Tokyo. Takuma was one of the opening members of Bar codename Mixology. In 2012-2013, Takuma made it to Top 10 in World Class and Casa Noble cocktail competition. Takuma moved to NY, inspired by Shingo Gokan. Now Takuma is the head bartender at Angel’s Share, one of the oldest speak-easy cocktail bar in NYC. Takuma’s enthusiasm creation of cocktails was selected as Time Out Market in NYC and he was invited as a guest bartender at Lyaness NYC and Mikimoto Pearl.

100% Soba-tini

75ml Towari Soba Shochu (Buckwheat), Takara, Miyazaki
10ml Mentsuyu
15ml Nori maple syrup
Yuzu wasabi salt rim

Stir with ice until cold. Served in a chilled coupe rimmed with yuzu wasabi salt.

45ml Mugi Shochu (Barley), Iichiko Saiten, Oita
15ml simple syrup
75ml milk-washed Kabosu & Kinako
Top with soda

Shake ingredients with ice and strain into a collins glass. Top with soda water.
