5cl Imo Shochu (Sweet Potato), Mellowed Kozuru Exellence-Kagoshima, macerated with Thai chili, fresh ginger and cardamom
4cl fresh lemon and lime juice
3cl simple syrup
1cl egg white


Shake all ingredients in a shaker with ice. Serve in a chilled glass and garnish with Thai chili. Served with 2 fresh lemonades: One with ginger—this serves to enhance the spiciness. One with mint—this is sweeter and serves to neutralize the spiciness.
